For those who can't easily buy paneer at a local store, Manjula has a good recipe for making paneer. Go to her website (address is right under the video) and type in paneer in the search bar at the top and it's the first recipe "How to make paneer". I have tried it out and it worked very well.

You can buy "baby spinach" pre-washed and organic, if you so desire. I usually give it a brief wash, anyway, if I'm serving it raw, as in this dish and pat the leaves dry. If I'm cooking baby spinach I usually just toss it in.

Manjula, is that "real" spinach? The leaves look too small. There are other leafy vegetables that sometimes are called "spinach".
