I only have one question….what are leftover mashed potatoes?
You forgot to save the starch that you squeezed from the grated potatoes. Squeeze them into a bowl and in 10 minutes the starch will fall to the bottom. Then mix it into the batter later. Your boxty will have a stronger texture.
