  1. As a southerner, it threw me off every time you mentioned "country ham" (you'd certainly know it from Missouri) and I had to think for a second what you meant! 🙂 This croque monsieur reminds me of the time I had one in Paris, it just looks even better.

  2. Hi, Billy, and Merry Christmas. 2:20 If you say, "Don't tell anybody," then can you please explain why you don't want people to tell anybody? One secret some chefs have from the chow hounds is that the fat in some foods is what gives them their flavor.

  3. I was doing the sauce a day ahead of time and thought, "Might as well make a little open faced sandwich for myself while I'm in here cooking." My family told me they weren't hungry and weren't interested. I let them each try a bite to see what it tasted like, and . . . well, let's just say I got about one bite myself! Absolutely delicious! Feeling like a commis making that bechamel sauce!
