  1. I'm gonna make this tomorrow!
    But I still want to point out a few things in regard to technique: always crack an egg on a flat service, don't put too much meat in the pan at once (cools down the wok, that's why you have water in the pan and don't get a good sear). And also, with carrots this thinly sliced, the blanching is really unnecessary. You want the vegetables to be a little crunchy still. So just put them in the wok, if you slice them this thin.
    And lastly, you can just add the corn starch to the meat when marinating. This is way better than making this optional mixture of starch and water…

  2. I'd avoid corn starch or at least put way less than I did.Made a brown slurry which I had to remove it by hand. Annoying!Also don't need salt if soy sauce it already very salty. I'd cook everything separately. Better to cook everything separately then combine toget later

  4. I'm diabetic so I use avocado oil or extra virgin olive oil. And replaced corn starch with Arrowroot starch. And I skipped the sauce on the veggies since it's sugary. But it still came out great and loved it.

  5. I ordered beef and garlic sauce – no vegetables- from a local Chinese restaurant. The lady yelled at me! “It just going be beef and sauce!!” I know, that’s what I want! 😂 Now I can stir fry at home and not get yelled at!

  6. This is a nice method but instead of egg add extra cornflour, bicarb, sugar and oyster sauce and after using the rest of this cooking method add a little water and then you don't need the slurry which dilutes the flavour and makes it floury.
