  4. I see a lot of recipes that call for putting the center into the freezer then covering the frozen center with chocolate. The only problem with that (in my candy making experience) is you then have to keep the chocolates in the fridge, because at room temp, the chocolate will sweat and you end up with a mushy mess. I make chocolates to send to family members and to give as gifts, so having candy that melts at room temp isn't an option. Make the center from icing sugar, coconut cream, coconut oil, and peppermint extract (or other flavors such as orange or cherry), cut out the dough and let it set on wax paper for a while so it starts to dry a bit. Then you can cover it with chocolate and it will remain solid at room temp.

Ive looked all over the grocery store, even the natural foods isle, and i am unable to find dairy-free chocolate chips – if the package says "may contain dairy and/or eggs", is that suitable for vegans? I've honestly stayed away from baking with chocolate because I feel a little uneasy using that chocolate…. Please help!!!!

  7. I got an assorted chocolates gift bag from someone I know a little, but who doesn't know I'm vegan. I saw right away I wouldn't be able to eat most of the candies, but held out hope that surely the peppermint patty would be vegan, I mean, how could it not be? It's just fondant and dark chocolate, right? [sigh] Thanks so much for posting this; it makes me feel better : )
