Looks great! Question – why heat the oil and then let it come back to room temperature? Nothing was added and spices weren't bloomed in the warm oil.

This is a wonderful recipe. Will this last a couple of days or should this be stored in the fridge for a few days? There's no vinegar in the recipe so I am guessing it has to be consumed in a week? Correct?
