  1. Another way to separate egg whites from yolk is to crack an egg on a saucer, put a glass over the yolk, and pour the white into another container. My mum taught me this. But she never did crack and use the eggshells like you did

  2. I'm pleased you stain your juice. I do that if I'm squeezing lemons lime oranges any citrus juice and I do it in a citrus squeezed not through my hands as I do not like pips or pulp and always have cuts on my hands ow

  3. The only puzzlement this excellent recipe gives me is this: why put lemon juice in the raspberry sauce for a lime pie? Surely lime juice is called for, if any is at all needed. When I make a raspberry sauce the raspberries have a strong enough pure flavour to not require any assistance from any citrus juice.

  4. Well we had a hankering for key lime pie and your recipe looked the best to me. I think my coloring of the filling is a bit more yellow, but I used farm fresh eggs. The yolk was a deeper yellow color. I did take a lick of the whisk and the flavor is out of this world delicious. It's in the oven for the setting of the pie and we will have it with tonight's supper. Thank you for sharing your knowledge and recipe!

  6. I'm DROOOOOOLING! Can't wait to make this. Do you think there is potential for making key lime pie ice cream with the pie batter that you made? What would be a good substitute if I don't like graham cracker flavor? Should I make my own simple crust with butter and flour?

  7. Made a dozen different Key Lime pies from a dozen different recipes and never liked any of them. Until this one. The egg yolks create a depth that is missing in other recipes and the level of lime juice is perfect (most recipes are far too tart).Just a killer pie that will have every guest at your next cookout coming up to ask you who made it. Feels pretty great to tell them it was you. I don't use the raspberry sauce which seems a distraction from how great this is.

    I've since tweaked the recipe splitting the condensed milk with half coconut condensed milk, added 1 tablespoon fresh grated ginger and use dark brown sugar in the crust. Not sure if it's necessarily better than the original , but it sure ain't worse.
