In the UK we keep our eggs out of the fridge. No reason to refrigerate. Cold eggs will also take longer to poach and the white will separate in the pan.
I'm thinking the pan method looks better. It looks like you can cook more than 1 egg at a time.
If I used the pot it looks like I can only cook one egg at a time and since I like them hard, the first eggs would be cold before I finish cooking all the eggs.

boil the whole eggs the day before for 3 minutes, put them in ice water and then in the freezer … peel them now they are ready in room temperature to have 1-2 minutes when they need to be used … or you can store it at 45 celcius in hours they are ready when you need them

I guess I can't poach eggs. I followed the instructions and lost most of the whites, which floated as foam on the top of the water.
(I "poach" my eggs in a skillet @ medium low heat with plenty of bacon fat. Works every time!) 😅😅
