Those are " serranos" not jalapeños. A little more spicy than jalapeños bit similar in taste

Sriracha requires fermentation of the sugar/salt/peppers paste. also, you shouldn't remove the seeds if you want to make a more accurate rooster sauce.

I have been vegetarian for a year and am transitioning to being a vegan so your videos are very helpful. I do however, have one helpful tip. When dealing with hot peppers (and smelling things like onions and garlic) it is a good idea to wear gloves. Even if you wash your hands after handling the peppers, the capsaicin may remain on your skin and get transferred to other sensitive areas (eyes, nose, etc) causing a very uncomfortable reaction. 🙂
