This fabulous Lebanese restaurant I used to eat ate at many moons ago used to put pomegranate seeds in their baba ghanousj
I have found that mixing the tahini, lemon juice and salt first, gives you a nice creamy whipped texture. Then add your eggplant or hummus ingredients. (Chickpeas, carrots, black beans, etc..)

Just made this. Went without tahini but 2tsps of sweet paprika instead of the cayenne. Roasted garlic really lifted your take on this
