I would also add some seasoning to the jackfruit directly before encasing it in the rice flour. That way the seasoning is throughout. The recipe is definitely something I will try.

I tried this and you are right it is salty and the pickles don’t help but the next time I will not use as much salt!!!

Can’t figure out how you prepared the jackfruit differently this time, so that it’s still in bigger chunks and not all mushed like the drumstick recipe? Also, at the beginning here you squeeze out the liquid from the prepped jackfruit, do you need to do the same if it’s done in the moment or only if it’s prepared the day before?
