What do you do about the feather bones in the drumsticks?
It’s Christmas Day and I’ve been working on this same dish and it’s in the oven now.
My house smells like heaven.
Been using this recipe for 5 years now. Some tips and tricks: make sure your Turkey is completely thawed and remove all ice. Dry your pan before any oven use. You don’t want water mixing with any of the juices.
Well I have heard enough about the origin of Baklava and it’s so funny. Not Greek and I don’t think it’s from Turkey either.
I deboned the turkey following Adam Ragusea's video. It's great but was a lot of work in the prep stage. I think this video looks like a happy medium and I'll be trying this next year.
I tried this for our Thanksgiving dinner and everyone said it was the best Thanksgiving turkey they ever had. My daughter said she never opted for turkey breast because it was always too dry. But she had two servings of my turkey and took home the leftovers! SUGGESTION: I used table salt for the rub. Next time I’ll use coarse salt to match the coarse pepper. Table salt made it a bit too salty for some. Brilliant hack. Thank you for your excellent video and clear narration.
The best Thanksgiving hack ever. I have been cooking my turkey like this for years now and it’s always a hit. Saves time and allows room for other dishes in the oven. This recipe has saved my Thanksgiving for years to come! You can also add other spices to the rub which gives you some variety with flavors.

Followed this recipe and the turkey was so salty it had to be thrown away.
I made this yesterday. It was a big hit. I bought 2 breast and then cut them off the bone. Everyone came back for seconds and my niece asked for the recipe. It was a little salty for my taste. Next time, I think I will pat some of it off before roasting. I also forgot to oil my rack and pan. After scrubbing and scrubbing I threw them in the trash. So don't skip that step. I even made the gravy. It was really easy and tasty. It took a lot of stress of me by making it in advance. Best of all, I have stock in the freezer.

A big added bonus here for me is that the prep work with raw poultry takes place the day before, enabling thorough cleanup and less risk for cross contamination on the day-of. Food safety is a big deal with turkey bc most of us don't cut up large birds on a regular basis, and that can lead to mistakes as we rush

i've made this recipe every year for the last 5 years and it's an absolute hit every single time. dry brine 4 life indeed!
I did this and it turned out awesome last year. Only suggestion, the seasoning for the Turkey overnight in the fridge dripped down into my sheet pans on the wire rack. Clean those up before sending it into the hot oven as I did not and the sugar burnt like crazy smoking up the oven and making a mess of the sheet pans.
