I always watch these vegan videos and then im like holy salt i'd be better off eating the real thing haha. Very cool though.
A follow up video could be interesting. Use the idea that you suggest at the end. Make the yolk part of the white by putting it in the white mixture as you fry it. The yolk is not supposed to float above the white , it is a bit caught inside. And while you make that video maybe do a recipe or two that incorporate the egg yolk, like a ramen bowl with the egg, a pizza with the egg in the middle. A video with other uses for the alginate could be interesting. Thank you for the video, well done.

I love tomatoes, but I am vegetarian (I'm making the attempt to go completely vegan as of a week ago), but I haven't had eggs in a few weeks. That being said, my favorite meal is breakfast in which case I love eggs and I am having a hard time trying to imagine a tomato replacing the egg yolk. …but this is the first time I have seen anyone add tofu, and so far I think I may like your version a LOT better. Can you use de-ionided water rather than distilled?

The whole process of making this is completely unsustainable and pointless. Just have a pet chicken and eat a real egg if you want it so badly that you'd go through with this. The time energy and products needed here are worse for the earth than eating a real organic backyard egg.

That's awesome…I once made my rib eye look like a cauliflower. When I took a bite I thought "Wow, this does taste like cauliflower!". 2:55 oh yeah I love chemical reactions in my food, way healthier to eat than an natural egg.
