Dijon mustard is also made with honey. That's really what makes a Dijon mustard Dijon.
This would be terrific as a honey mustard salad dressing on a big spinach salad too! I used to love spinach salads w/honey mustard dressing, but I didn't even think of using maple syrup instead…cool. This is a great vegan substitute. I'm gonna try this and by the way, your recipes look AMAZING. Just subscribed!
