It looks like she uses coconut cream not coconut milk. Coconut milk isn't thick like that. It doesn't separate in the fridge either. Coconut cream does.

A fat free version of this is to use frozen bananas instead of using cashews and coconut. That is also going to be great. I did that yesterday.
