This will be my first Christmas as a vegan and I usually have turkey breast, red peppers and onion wrapped in puff pastry, so this actually looks like a pretty awesome alternative 🙂

I think I'm going to "update" my traditional vegan Christmas dinner. I normally fill my puff pastry with smoked unripe spelt grain (hm, I don't know if you have something like that in Canada. It is called "Grünkern" here) but a seitan filling plus mushrooms sounds equally appetizing.
