I made this recipe today (9/2/20) but modified it to be keto by substituting Swerve sweetener for the sugar or honey. It was very good but like a lot of dishes, it’ll be better tomorrow after the flavors meld overnight. Thanks. Darlington, South Carolina
Update 9/3/2020- Air-fried some Cajun chicken thighs to pair with the coleslaw from yesterday. Like soup and chili, the coleslaw was even better the second day as the flavors had a chance to meld and permeate the vegetables. I’m planning to smoke a mess of ribs for a bunch of friends later this month and this coleslaw will pair nicely with a good Carolina mustard-based sauce. My wife has declared this a “keeper” for us.
