Attention: all of these are wrong. Only people who don't understand cooking or fish would ever grill a sea bass. Unless you're stuck on a desert Island.
The correct and only right way to cook sea bass is pan searing it, flipping it on the skin, THEN bake. But you don't bake, you BROIL on high until 137° at the center
If you don't have a meat thermometer, stop cooking and get a friggin thermometer. That's like driving without a wheel.
If you tried to pan sear it at home, it will take forever, burn, and cook unevenly.
Speed is the key with sea bass, this video is wrong. High temps and fast cooking. That's how you get a golden crust and buttery fish.

I just fry it with avacodo oil for 4 min on both sides w lemon butter sauce add cappers. Delicious. I always ask market to remove fat and skin. Saves money all meat 100

I agree, this is the BEST topping for a beautiful piece of mild, flaky but firm white fish, and Sea Bass is the best! I've been using this "tapenade" for years.
Has that bass been bleached😂, the bass I catch in the uk is nowhere near that white.

If you cook the sea bass in the oven for 25 minutes at 400 degrees, it will give an oven sear. Use melted butter with onion salt, garlic power, and black pepper.

My favorite! I rigged a potato base with what I had. Chunked idaho potato, diced vine tomato, I did blister my own bell pepper, onion, garlic and because I had no olives, I squeezed fresh lemon juice into it. It's pretty good, not as beautiful as Chef Billy's. The sea bass was the exact method and it was fab!

I get my Chilean sea bass from the fresh market at $33. a lb. The butcher there does my steaks too. I don’t buy from the meat displays (meat or fish case)….. I get mines cut fresh.
